Message those are signs of a head gasket leak.. The Air Bubbles are getting stuck behind the T-Stat preventing it from Feeling the water temp, untill the temp gets too hot.. then the T stat opens as the engine is too hot so it over cools and closes.. then repeat the process..

Where to go from here.. If this was my car.. We need to pressurize each cylinder one at a time, and watch the engine water Outlet for any bubbles..

Purchase a 'Leak Down Tester'.. Remove the water out hose from the block.. Strip the Plugs out of the car, and Make room to get a Socket and wrench on the front pulley..

Place each Cylinder at TDC Compression Stroke and then Pressurize it with the tester.. leave it for about 5 Minutes.. Check for bubbles in the water out.. Move to the next Cylinder..

Work your way down the Engine..

If my theory is correct, one or two of the Cylinders will cause a little water to puke out of the water outlet.. or it will actually blow bubbles..

If you find an issue.. The HeadGaskets needs to be changed..
