I cleaned up everything, checked all the fluids, and this time hooked up my Defi oil pressure gauge to monitor. Ran the car again, this time with someone else there as backup to keep an eye on everything. Car got back up to temp, he revved it quite a few times, not going over 3500rpm. Oil pressure was steady and didn't go over 7.0 kPa on the gauge, temp was right in the middle. I let the car go through two thermostat cycles, and kept the fluid topped off. Car wasn't leaking any oil or coolant, and the coolant pop-off didn't happen again, thankfully. I'll have my fingers crossed when I first take it out on the road in a few weeks, but still, if anyone has an idea of what the hell happened and what to look out for in the future, I'm all ears
