I had this problem many years ago, I had to come almost to a complete stop before using the clutch if I wanted to avoid stalling. I cured it with some fine tuning of the TPS adjustment. The correct TPS position is between 0.4 & 0.5V. Most people set it at 0.45V but this doesn't work on all zeds ......... you have to vary it slightly to find the 'sweet spot' for your motor (it can vary a lot due to your level of modifications) . . .
