I suspect you didn't install the clutch release fork to pivot ball, to release bearing properly. That would be the only reason the pedal would have to be depressed to the floor to engage. You didn't state if you changed the clutch release bearing. If you bobbled any part of that assembly you may be in for a drop of the trans.
Try removing the clutch fork dust cover and using a flashlight take a peek up in there. If the clutch release bearing carrier springs are not engaged properly on the fork, that would explain the pedal reach issue.
