Message 70 degree day. My car (with stock cooling system/engine/turbos) usually hangs around 180-190 as well. The only time it gets closer to 200 is either on really hot days and stop/go traffic; or if I had air in the system.

Have you tried burping your radiator multiple times? It seems like I was able to get air out after 2-3 burps each time I've opened up my cooling system. Do you have a good 50-50 mix of coolant/water? Have you checked the coolant level in the radiator? I used to check my level from the coolant overflow where it seemed like I had plenty of coolant, but when I look inside the radiator (obviously not when hot and pressurized), it was actually quite low.
