The first was, as you feared a leaking head gasket. The coolant was leaking into a cylinder and getting turned to steam. The steam, in turn, cleaned off the oil from the cylinder wall and in short time the cylinder was .003 inch out of round and waisted from lack of oil. How I could tell was, as Vonblake83 mentioned, was that the coolant level was dropping but there was no external leaking. And as zwllamay mentioned, a garage can put their emissions probe near the open radiator fill hole while it is running and "sniff" the gases coming from the coolant. The second time was when I had a clogged radiator. I changed the thermostat twice, had the system flushed, sniffed, pressure tested. $$$$$ You couldn't tell that there should be a clog since it appeared to be very clean inside. I finally changed the radiator and the problem went away. Good luck!!
