regarding the paint job, you really need to do the surfacer (primer/surfacer) with all the parts installed on the car, in final 'fit' configuration. when you block sand, between panels will have perfect eleveation. this will yield in a completely smooth and visually seemless body panel all the way down the car. if you do it off the car like he is, where there are gaps (hood to fender gap, for example), the paint will appear to roll over into the gap, drawing your eyes to the gap, and giving the appearance the body panel is not flat.
