yes, should you give them an appraisal for a $60,000 car, you will be charged for just that (other words, you get what you pay for). BUT they should in some or most cases give the car a manual "symbol," rather than whichever simbol comes up for 300zx's. So in terms of how much the replacment cost would be and its higher likelyhood of being stolen or whatever, it will not include the fact that its a phastasphuck car. When I worked at progressive, it was like that for every Ducati we'd insure. An R1 would rape you in premiums but a 996 would be half of it because it was rated more as a value, rather than a defined (performance) bike. i think :)
