People often mod their Z's for increased horsepower. The stock injectors will eventually become the limiting factor, expecially once you start talking about serious mods like bigger turbos, massive front intercoolers, etc.

A rule of thumb that doesn't make any sense other than it seems to be true is that the size of the injector in cc's roughly equals the maximum amount of horsepower for which the injectors will be able to deliver fuel. So 555cc injectors should be able to meet the needs of a modded Z engine up to around 555 HP. Since most of us don't surpass that much horsepower at the rear wheel, that size seems to be the one people use most when upgrading their injectors, like I will be doing next week.

I have not seen any evidence that a fuel injector upgrade by itself increases horsepower. It simply allows the fuel delivery to live up to the potential of the other modifications.

As far as why they picked those exact sizes, I have no idea. Prob large enough to justify the upgrade without making the increase an overkill.
