Just getting water sprayed in the intake will not hydrolock the engine. It takes a lot to do it. If you are in deep water and your air intake submerges then it will suck up ALL water, and that'll kill your engine pretty quick. But I wouldn't worry about spray. When I was winterizing my jet ski I had to pour this winterizer into my carb while the engine was running and keep pouring until it stalls. I didn't want to hydrolock it so I went easy on stream of liquid I poured in there. That thing didn't want to stall! It kept running with a good amount of straight liquid being poured right into the carb. Finally I just emptied the whole bottle into it and it stalled. It took a high concentration of liquid just to stall it, and hydrolocking it would be even harder. But like I said, if you submerge your intake in water such as in a flood, your engine is toast.
