If you don't, you get hit with the full fine and the points. Chances are, with a decent driving record, they will reduce it about two levels..so this 6 pointer (I assume will most likely become a 2 pointer), but will still be a moving violation. The odds of you getting a 30+ mph over ticket reduced to a "non-moving" violation, which won't affect your insurance are NOT GOOD. That's way too fast. By pleading "not guilty", you can at least see what the District Attorney will offer you in reduction, and if you choose to fight it, you can hope the officer (s) don't show, and you'll get off. If they show, you're gonna get hit with the whole offense, no if's and's or but's .... they will drill you!!! If they don't show, you're off clean, but usually the plea bargain is your best bet. It's a gamble, but NEVER just pay it.. ALWAYS contest it and see what they offer you. Good luck!
