When I ran at Texas World Speedway I was getting up to 120mph down the main straight then would have to brake for a left hander down to about 70-80 or so on street tires. If you learn how to manage your brakes by braking early and not as hard you could probably get away with doing a track day. You definitely won't be able to run 100%, though. You should start feeling them fade away the longer and harder you run. Once you feel your brakes are fading out then pull off into the hot pits, wait for them to cool a bit and go back out again. I would recommend simply stopping and waiting for the next session. No brakes are no fun.
