that's not what an O2 sensor does. For timing, the car would do what your tuner does, listen for knock, back off if it hears knock, or stop as it approaches MBT. Your tuner may push MBT a little to make sure there is no torque left on the table, but the engine designer calculated timing at MBT and the car timing will stop within a safety margin. Sure the tuner may be able to squeeze a little more out of the engine, but that last few ft lbs may be at a risk the manufacturer is not willing to take.
