Videos are always recorded continuous (one per session). Laps are stored separately. To overlay multiple laps at once, select any lap of the session and press Overlay. Next, expand the range of laps to those you want to see in addition.

NB: The iPod has no GPS, only iPhones come with an internal GPS. The location service available for the iPod is based on triangulation of mobile and WiFi networks. It is by far too inaccurate to use it for data recording. The iPhone GPS is usually good enough for 0.05 timing accuracy.
