I've been developing some Z Diagnostic software (La-Z-Link) designed specifically with tablet/touchscreen support in mind. The main difference being multi-touch and low-resolution screen support. It was designed to run on screens down to 640x480 resolution with a 'malleable' UI that lets you resize/move the gauges/graphs/data variables to best fit your screen. A full windows OS is required, although it would be fairly straightforward to port to Windows RT.
I could probably be convinced to add in a 'Danger to Manifold' warning...
