Message want to work on other cars, you will find your self some what tired of Z32 after time and want to widen your variety and move onto other nissans, infinitis and cars eventually and you really need too. Z32 is an old car that is expensive to repair and you will find that there are not a lot of people willing to pay shop rates 95 ish$ a hour on their z32. If you work at home charging 40-75 with no mark up or byo parts you ll find it easy. but stepping into a shop is expensive at near 2800$ a month in rent, electric, insurance, water.

break down:
$10,000 bad ass hand tools start up
$5000 up efi diagnostics tools for 50% of cars
$20000 2 lifts and an alignment machine
$24000 on year of shop space
$3000 insurance mandated to lease someones space
$1300 business cards, store front banner, shirts, stickers
$450 tax id LLC filing

you plan should to have money set aside for the first year of rent/space.
already have you hand tools, cherry picker, engine stands, jacks, diagnostics. etc
have money up front for business cards shirts etc and llc
you can put the lifts on a creditcard

A good z32 mechanic is work min 100$ a day or 25$ per flag hour. a hard working mechanic needs to take home 750$ after taxes to make a good living for ones self and quite a bit more for a family.

IMO specialty shop labor is work 100-120$ per hour.

You need to become the supplier for their parts as much as possible, as you will receive them much faster and accurately. And in automotive you parts profit need to be near equal of you labor profits.
