Hot springs & rafting in Rotorua. From Wellington you can take the car ferry over to the south island. We drove down the west coast over to Mt Cook national park. Did a tour to the base of a glacier and a ski-equipped Cessna ride up to the top of that same glacier. Drove over to Queenstown where we did some late season skiing, speed boating, and bungee jumping/falling. IIRC Queenstown is kind of like a vacation mecca, there is no shortage of things to do there. There are numerous national parks and breathtaking scenery all over the place. Think LOtR without the monsters and castles. Just give yourself plenty of time. Spent 10 days there and wanted some more. Just a heads up... they use beets on food like we use tomatoes. Learn early on to ask for no beetroot please! Back in the early 90's when I was there, in some of their smaller towns, they literally roll up the side walks after sundown. Had to knock on a few doors looking for motel managers in the early evening time more than once.
