The triple disc actually has a lighter pressure plate than the dual disc, so it's easier to control the pedal. But, it doesn't have sprung center hubs, so the engagement is harsher. I have a carbon fiber driveshaft and lightweight TE-37 wheels, so that helps reduce my inertia from a standstill. I also stall like you... typically 2-5 times a week in city traffic. Oh well... maybe it's time to go back to a single disc. :(
