I think a true efficiency test would be best performed in a steady-state situation. Your data shows the in and out lines are converging on the top end, but the engine is all done by that point and a steady-state is never reached. What you're showing here is how effective an intercooler is at being a heat sink due to its thermal mass... which I guess if you have data from other intercoolers, would be fun to compare with. But, for a true efficiency test, take the engine out of the equation and test the heat exchanger in a controlled environment.
