Subject	Chemistry question--Does oil breakdown if car is not run?

Message	Car manufacturers recommend changing the oil every year regardless of mileage. I dont understand how it breaks down in the absence of heat? Is this also an issue in storing unused oil in the bottles? Synthetic and mineral oils the same? Thanks in advance!
