You used to have a red one that I never saw get finished, just get a shell for around $500-$1000, stick with the KA or go SR if you want. Its a light chassis, tons of cheap body panels available for those off road excursions and there are tons of qaulity suspension bits out there to make it stick. not to mention a good used parts market. Like you said, leave the Z alone, too much work with little result. As for the GTR, leave the body alone and just put on some better wheels, tires, suspension and do maybe intake, exhaust and ecu upgrades and just have fun with it. on and off the track. The GTR would be very fun on the big road courses, so maybe schedule a couple with it per year...you spoiled bastard with all of your toys!
