The seats look pretty good in your car, but the seatback's lack the OEM form...attention to detail and possibly the lack of an example to work from. The seats look like other OEM leather seats I've seen on other cars, but they are shapeless compared to OEM Z seats. Did your installer have an example to work from? If he doesn't know what they are supposed to look like, he may be treating the job based on his experience. It doesn't hurt to show a few pics and ask if he can tighten up the bolsters and headrests, sounds like a decent shop. And for all the trouble you've gone though to match OEM color and material, I would have thought fitment would be as important.
