Cooling the brake fluid.. via the surface area of the pistons it comes in contact with? Sorry I don't really see what you are saying here. If that is what you're saying, wouldn't it heat the fluid because the metal pistons ability to transfer heat easily, from the hot brake pads? What inferno posted makes sense as well, the more pistons you have, the more area the fluid is pushing on, and the less distance the individual pistons move. And if I remember correctly, the more pistons you have, the more times the total output force has to be divided.
