you can pass a max of 2560 x 1600 down a single cable. since none of the screens will need anything close to that (as I thought was implied, but you certainly made clear to anyone else reading this who might have been confused.), the combined output at a single choke point will be less than 2560 x 1600 thus you only need one VGA/d-sub output from the carputer. so then you just split the signal to go to multiple screens and have each uniquely and discretly ref'd by the os(hardware or software or both does this quite easily). If your going to have that many displays then sure isolate an app to each screen, as you said it will look / preform(UI) best on a small touch screen. if they are discrete displays logically to the OS - setting each to be it's own discrete work space should not be an issue, then setting each app to it's own workspace at full screen is a non issue. summation: one output split into inputs for multiple discrete displays.
about the HDD. so basically you don't have some special mounting shock damping system going on there. your weighing the cost vs life, gt300zxtt made it sound like there was something really special, so I was wondering. Your roads must be much better than colorado if your last one lasted 4 years. (then again you don't put a lot of miles on it either)
last time I helped with someone project like this we spent a lot more time on writing a workable BSD driver written to natively and cleanly interface w/ the OEM head unit for output.
