it can be done but you will need to let the rack in pinion sag and lift the motor out slightly to get clearance. I had to do it during my engine build. During the build I noticed that the dip stick was sticking out between the oil pan and the block to my surprise. I really didn't want to completely pull the engine so I had to drop the rack in pinion so it would sag down lower (note_car is jack up on stands, and had a another jack adjust how much sag i wanted). After getting enough clearance i completely removed the pan, and then removed dip stick. Aftrer that I added seal to the pan and placed back on to bolt down. This is not the best practice because it is safer to comletely take the engine out and put the engine on a stand to take off oil pan and reseal with pan facing you to let gravity do the work for you.
