cruising and normal driving is just fine and you will mostly likely get great gas mileage. But if you plan on boosting and driving hard then you want to run closer to 180 to give you buffer for raised temps. That is why they make different ranges thermostats depending on the driving application and the time of year for climate change. In Arizona summer I would want to runner cooler than in the winter time when it is 40 degrees and the engine is barely hitting 170. The internal parts aren't expanded to their hot clearances and the engine is running rich due to colder water temps.
