Fuel injectors are rated at 43.5psi. So if you put 43.5 psi fuel through them and put them at 100% duty cycle they flow at their rating. Some people use rising rate fuel pressure regulators to increase flow. This causes an improper spray pattern. The fuel pressure regulator in our cars is 1:1 and is designed so that the pressure drop in fuel between the fuel line and manifold is 43.5 psi. This results in proper spray pattern and atomization. Now there are cars that run very high fuel pressures stock. They are direct injection cars. They run the high pressure because they inject the fuel directly into the cylinder where the pressure due to the cylinder compressing the intake charge is high. I've heard of direct injection engines using 90-120 psi fuel. However, I believe the pressure drop across the injector is still 43.5 psi.
