I just had my engine out, prepped it for painting, had my car paint matched and set up in a spray can (using the gas door to computer match the color), painted the bay after wrapping everything in sight with aluminum foil, and then clear coated it. It looks pretty nice. You could probably do the same thing (depending on you patience level) with some extensive prepping and wrapping, as most of our engine bay isn't seen. It would be a PITA, but done with some patience, correct prep, and TLC you could really spruce up the bay even with the engine in.
