It's not that difficult. I run on 275/40 rear which is also about 4% larger than stock. So if your trip meter says you have traveled 250 miles then just do 250 * 1.04 = 260 miles. Use that to calculate your MPG. Or just use the 250 and multiple the result MPG by 4%, same difference. BTW, I was been kindda sarcastic, the 4% taller gearing will make very small difference even in highway cruise.
