Message I have been testing my electric fan setup in the Florida summer heat - here are some results

Mod list
drilled water jackets
Stock 185 Deg Thermostat
Koyo Radiator
Primary fan - 16 inch Spal puller 2500 cfm
Custom shroud
Digital Temp gauge and controller
A/C fan has been replaced with a 2500 CFM Spal pusher fan

Running Conditions
Idling
Ambient temp - 98 F
Fan set at 180 F
Actual temp at idle - 180F to 182F

Moderate driving around town under 40 Mph
Ambient temp - 98 F
Fan set at 180 F
Actual temp - 182F to 187F

Hard Driving - several pulls 0 - 120mph
Ambient temp - 96 F
Fan set at 180 F
Actual temp - 185F to 189F drops fast to 185 when you get off the gas

Highway driving 10 minutes at 80 - 90 mph
Ambient temp - 96 F
Fan set at 180 F
Actual temp - 185F to 187F brief spikes to 189 when passing

Will be testing with A/C later today once i get the A/C recharged. With the secondary fan firing up i don't think it will result in a huge temp increase. I think it might help to use a 170 or 175 Deg thermostat since i can actually get the car to idle and hold steady at 175 F if i reduce the fan starting point that low.
