| relavent, and irrelevent; If I were to build a 'single car' workshop as you have stated, i'd go with depth.... my garage is 20 feet deep x 22 feet wide. the pseudo work bench in the picture is 2 feet deep. with the car set back with about 6" to clear the garage door, I don't have 'plenty' of room. I have room obviously, but not plenty. 
As far as width, I can park my car at an angle (as noted in the photo), and still open 3 of 4 doors when two vehicles are in the garage.

dunno if this helps, but imagine the center line being the kitchen door there... thats 11 feet wide. I think going for 15 feet wouldn't too bad at all. 
disclaimer: I apologize for the mess. I was mudding all weekend trying to finish the walls and ceiling to prepare for paint. :Let's just say you were to build a workshop/garage thing in your yard. Not worrying about tool storage. :How much 'wiggle' room is adequate to work around a car? :6 feet on each side and front/rear of the car? :Is 20x15 enough space for working on a Z? or an RX7? ;) :
