People with long legs will find that their knee hits the steering wheel if they try and heel-toe properly. Freedom of leg movement in the footwell, I've found, is the #1 important thing in being able to heel toe. I've done the 'stick your foot between the pedals and rotate ankle' technique and that's fine for the street because it gives you the basic concept. However, for the track the side of your foot wont give you enough pedal pressure to slow the car enough to prepare for the next turn. When you come up to a corner the important thing is to get the car slowed so you dont go flying off the track. Therefore you need to brake with your entire foot, not just the side. Then you just 'tap' the gas pedal by rotating your foot while still braking. Again, legroom is the key followed by a thin soled shoe to give you a better feel of the pedal. For those of us with long legs what I've found to be the most helpful is a steering wheel hub extender. No fancy pedals are required, just find a way to move the steering wheel closer to you. Not only does it give you more room in the footwell it also gives you better control over your steering wheel. If you look at many race cars the steering wheel very close to the driver's chest compared to a regular street car.
