The zinc will burn off the friction surface within a day or two. Inside of the vanes and the hats should be fine but it will eventually fade.

should I plan on clear coating them?
You could clear coat the non-friction surfaces, but it'll probably discolor and look like crap after a short while.

other option would be regular rotors and paint hat silver

Correct. The zinc will protect the cooling vanes if you go that route.

The friction surface will always have rust if it sits in humidity. That's normal. The rest is purely cosmetic. By the time any surface rust penetrates enough to be a problem, the rotors will be worn out anyway.

Mask and paint with a good high temp header paint and drive it daily. That's my suggestion :)
